Lean Sausage, Mushrooms and Greens

Serves 4



Ingredients:

  • Olive oil spray

  • 4 Italian-style Lean Turkey or Chicken Sausage

  • 1/2 lbs Raw White Mushrooms ( washed, sliced)

  • Minced Garlic ( three tablespoons or approximately 6 cloves)

  • 4 cups Frozen chopped Greens, you may use Kale, Broccoli Rabe, Collard Greens, or other. You may use fresh Kale or other Greens if desired. You will likely need a dutch oven. Please see this link, for more information about cooking Garlic Kale. This link provides a recipe for Beet Greens.

  • 1/3 cup Chicken Broth

  • Hot pepper flakes to taste ( optional)

  • Salt and pepper to taste ( optional)

Directions:

  • Heat sausage in a medium non-stick skillet sprayed with a small amount of oil spray ( enough to coat the cooking area) for 10 min until fully cooked, turn frequently to brown all sides

  • Remove sausage from heat and allow to cook slightly before cutting into slices.

  • Remove any residue in the pan and respray with olive oil.

  • Saute sliced mushrooms and garlic in the pan until slightly brown

  • Add chopped greens and chicken broth. Season as desired with red pepper flakes.

  • Cook for 8-10 min until greens are soft and cooked.

  • Season as desired with salt and pepper.

  • Serve Sausage over a bed of greens and mushrooms.
