Grilled Peaches and Ice cream

You can use Nectarines for this recipe if the fuzzy skin is not your favorite. Nectarines are actually almost identical to a peach with a slight gene difference that causes it to have no fuzzy skin.

The gist of it is to squeeze the area near the stem gently and if the skin gives its ripe, if it is firm it is not ripe.

YOU WILL NEED:


2 fresh Peaches or Nectarines

Canola oil

Vanilla Ice cream of your choice

Caramel sauce- Optional

Granola- Optional


TO MAKE THE TREAT:

  • Cut Peaches or Nectarines into halves

You can remove the pit with your fingers in most cases. Be very careful not to stab to remove it.

  • Set peaches aside

  • Heat grill to medium-high.

  • Brush cut side of peach or nectarine with oil.

  • Place oiled/cut side of peach or nectarine down on grill over direct heat.

  • Grill 2 to 4 minutes.

  • Brush skin side with oil, turn over and move to indirect heat. Grill about 10 minutes longer until soft and aromatic.

  • Scoop vanilla ice cream over the top. I prefer low calorie options like Halo or frozen yogurt.

  • Top with granola or caramel sauce if desired.
