Copycat Starbucks Spinach & Mushroom Egg Bites (Eating Well recipe)

Nothing like a way to get a tasty morning meal for less. Thanks to Eating well for creating some great copycat recipes!


  • 1 tablespoon extra-virgin olive oil

  • 1 ½ cups sliced cremini mushrooms

  • 3 cups packed baby spinach

  • ½ teaspoon kosher salt, divided

  • 8 large eggs

  • ¾ cup nonfat cottage cheese

  • ½ teaspoon cracked black pepper

  • ¼ cup shredded Swiss cheese

  • Preheat oven to 350. Prep a muffin pan by coating each cup lightly with olive oil.

  • Saute mushrooms and spinach over meduim heat for 1-2 min. Add salt.

  • Finely chopped the spinach and Mushroom mix in a food processor.

  • Add eggs, cottage cheese and pepper to the processor and mix until blended by pulsing.

  • Add Swiss cheese and pulse.

  • Place muffin tin onto baking pan that has a rim and fill the cups of the muffin pan with mixture. Fill the pan under the muffin tin with water so the muffin tin is in a bath of 2 cups water.

  • Bake approximately 25 min.
